Enjoy summer fruits with this berry cobbler, lovely and crunchy, a cross between a cake and a crumble, delicious ….who knew!
1 cup gluten free flour
1/2 cup spelt flour
1/2 cup barley flakes
1.5 cups milk – use almond milk if you want it dairy free
1 tsp each of salt & baking powder
4oz coconut palm sugar
8oz mixed organic berries
4 tbsp butter
Hand whisk the dry ingredients.
Add the milk and mix to a batter.
Meanwhile Melt the butter and tip into the baking tin.
Pour batter over the melted butter.
Spoon berries over top and gently push into batter.
Bake 40 mins at 170C and serve with some whipped cream or some delicious daily free ice cream from here if you are Dublin based.
It’s a perfect summer time dessert.
