Feta Salad with Green Beans, Peach & Classic Vinaigrette

One of the best ways to get loads of vitamins, minerals, fibre, plant stanols & sterols is to eat loads of fruit and veg.This delicious salad combines both with really ripe peaches, some feta and lots of greens.

12g of green beans cooked and cooled

Handful of cherry/baby plum tomatoes – half some and quarter some

1/2 Cucumber de-seeded and sliced

1 bag of rocket

2 spring onion trimmed and sliced

1 block of feta sliced in half horizontally with a drizzle of oil and tsp of oregano tossed onto it

2 ripe peaches sliced

Add the feta to the centre of a serving plate, surround by the rocket, arrange the tomatoes, peaches, green beans and spring onion over it, and just before serving, drizzle over the dressing (below).

Serve with some crusty bread.

Classic Vinaigrette

The classic vinaigrette is twice the oil to vinegar, chopped crushed garlic, Dijon mustard, honey and seasoning including a pinch of sugar if needed. Simply whisk everything together to combine.

30ml apple cider vinegar

60ml oil

1tsp dijon mustard

1/2 tsp sugar

juice of half a lemon

1tbsp honey

Salt and pepper to taste
