I’m on a short mad dash round the east coast of the US for work, in to NY, down to Florida, up to Washington DC, home via NY in time for our wedding anniversary..just in time!
Iv eaten well, amazing salads and fish, huge portions though, HUGE. My one bug bear on this short trip – crap coffee, filtered muck tasting of nothing. Ive had to take to ordering an espresso after dinner as thats the only way to get something half decent. That doesn’t help the jet lag but it’s so worth it. When I’m home I’m looking forward to one of Dom’s special brews…..oh and a scone…
Crunchy oatmeal scones
560gr flour
300gr oats
130gr raisins
50gr sugar
2 tsp baking powder
1tsp baking soda
1 rounded tsp salt
220gr butter chilled and chopped into cubes
480ml buttermilk
Mix flour, sugar, soda, baking powder, and salt in a large bowl.
Add butter and rub into coarse breadcrumbs.
Add oats and raisins and stir to distribute well.
Add the buttermilk and form a rough ball of dough.
Sprinkle board with flour and tip out. Knead gently and form s rectangle about 2inches high. Cut into squares and bake on a silicone mat or floured tray for 25 mins at 190C.
